The search for the perfect planner

I have a few obsessions – planners and purses are just a few of them.  I am constantly searching for the perfect planner (and purse for the planner).

Today is an exciting day!  My new planner starts today!!!!!

I bought this planner about 2 months ago and have been patiently waiting.  I prefer the weekly view.  I have a column for each family member, a column for dinners, to do list, a place for notes.  Best of all (for me) I can see it all without flipping pages back and forth!!  My planner is the Day-timer and I found it at Walmart.

Mexican Rice And Beans

Another Mexican tasty treat!  I will be honest on the front end.  This was a little lacking.  I kept thinking some sour cream would help it all come together (but I didn’t have any)…  so next time.

  1. 2 cups cooked brown rice
  2. 1 can black beans
  3. 2 cans diced tomatoes
  4. 1 can mexican corn
  5. shredded mexican cheese

Mix the first four ingredients together.  place in a baking dish.  I sprinkled half of the cheese in the middle then topped with the remaining cheese.  Bake at 350 degrees for 20 minutes.

Enchiladas

Enchiladas are something my husband and I really enjoy and do not make often enough.  I alter the recipe slightly each time depending what I have on hand.

  1. 1 – 1 1/2 lbs of ground beef or turkey, cooked
  2. 1 can taco sauce
  3. shredded mexican cheese
  4. 8 soft tortilla

After you cook the meat, add 1/2 of the can of taco sauce and simmer until well mixed.   put some taco sauce onto each of the tortillas, add the meat mixture, sprinkle with cheese, wrap the tortilla and line up in a 9×13 baking dish.  Spread the remaining taco sauce over the tops of all the tortillas, sprinkle with cheese, bake at 350 for 15-20 minutes or until cheese on top is melted.

Chicken Pot Pie

This is my go to meal…  You know the kind.  The one you make for a neighbor who had a baby, the friend who had surgery, etc…  It is easy, quick, holds well.

  1. cooked chicken cubed (you can use canned chicken)
  2. two cans mixed vegetables
  3. one can cream of (mushroom, celery or chicken)
  4. pie crust (I buy the refrigerated ones)

Mix first three ingredients.  place in a pie dish (can also use an 8×8 or 9×9 pan).  Lay the pie crust on top slice to vent.  Bake 1 hour at 325.
